Browned Butter Syrup

When you think of a homestead breakfast, what pictures does that bring to mind? Bacon sizzling, bright yellow/orange eggs cooked to your liking, fresh squeezed juice, perhaps a glass of raw goat’s milk, and waffles flowing with newly-churned butter and pure maple syrup? Admittedly though, this is not a typical homesteading breakfast. With all the work that needs to be done with animals and chores, a normal breakfast here at GHR consists of oatmeal or grits in some form or other. However, on special occasions we will break out the waffle iron and make some breakfast magic.

So what happens when, horror of horrors, you find that breakfast is ready and there is not enough maple syrup? Maybe you just were never fond of maple syrup in the first place. The recipe I’m about to share has not been passed down for generations, but I’m pretty sure it will be. This recipe actually had its origins somewhere out in the internet, but then was adopted by our family, was nurtured, and grew to become the wonderfully flavorful condiment that it is.

GHR’s Browned Butter Syrup:

2 sticks of butter
1 cup cream
1 ½ cup sugar
2 tsp vanilla extract

Brown butter lightly in saucepan. Pull off heat and add 1 cup cream 1 ½ cup of sugar. Mix thoroughly. Return to heat until sugar is dissolved. Add 2 tsp of vanilla extract. Makes about 3 ½ cups of syrup.

The uses for this syrup should not be confined to simply waffles and pancakes. Let your culinary imagination be free in exploring the possibilities. The flavor is similar to a rich, buttery caramel. For starters, you can drizzle it on your hot cereal, stir it into you coffee, or even eat it straight off a spoon. Let us know what uses you find for it, or share a cherished recipe of your own!
